๐Ÿฅ’ Crispy, guilt-free zucchini chips that satisfy your snack cravings without the calories

  • Total Time: 30 minutes
  • Yield: 2-3 servings 1x

Ingredients

Scale

1 large zucchini the main vegetable; thin, even slices are key for crisp chips

sprinkled generously Kosher salt draws out moisture from the zucchini so slices crisp up instead of steaming

2 tablespoons extra virgin olive oil helps the slices brown and carry seasonings; healthier fat with good flavor

1/2 to 1 teaspoon garlic powder adds savory depth; adjust amount depending on how garlicky you like the chips

Instructions

1-First Step: Gather and prep Gather your ingredients: 1 large zucchini, kosher salt, 2 tablespoons extra virgin olive oil, and 1/2 to 1 teaspoon garlic powder. Rinse the zucchini and trim the ends. Use a mandoline set to about 1/8 inch or a sharp chef’s knife to slice the zucchini into even rounds. Consistent thickness is essential: too thick and they will be soggy; too thin and they can burn.

2-Second Step: Draw out moisture Lay the zucchini slices in a single layer on paper towels and sprinkle generously with kosher salt. Let them sit for 5 to 10 minutes. The salt draws excess water to the surface, which you will blot away to improve crisping when air frying.

3-Third Step: Dry and season After 5 to 10 minutes, pat the slices dry with clean paper towels to remove the liquid and extra salt. Transfer the dried slices to a large bowl. Add 2 tablespoons extra virgin olive oil and 1/2 to 1 teaspoon garlic powder (adjust to taste). Toss gently until every slice is lightly coated. This light coating of oil helps the chips turn golden and carry the garlic flavor without becoming greasy.

4-Fourth Step: Arrange in the air fryer Arrange the zucchini slices in a single layer in the air fryer basket or trays. Avoid stacking or overlapping slices; space allows hot air to circulate and crisp each chip. If your air fryer is small, split into batches to prevent steaming and soft results.

5-Fifth Step: Air fry at the right temperature Set your air fryer to 400 degrees Fahrenheit. Air fry for a total of 15 to 20 minutes, but check around 10 minutes. Cooking time can vary by air fryer brand and slice thickness. Around 10 minutes you should check and remove any slices that are already crisp and golden brown, then continue cooking the rest until all are done.

6-Sixth Step: Monitor and flip if needed For even browning, flip the slices halfway through cooking if your air fryer model does not circulate air evenly. Some baskets can be shaken gently at the 7 to 10 minute mark; others benefit from a manual flip for the most uniform crisping.

7-Final Step: Cool and serve Remove the chips as they reach a crisp, golden-brown color. Cool them on a wire rack before serving so steam does not soften them. Cooling on a rack keeps air circulating underneath and preserves crunch. Serve warm or at room temperature with your favorite dip.
