Ingredients

125g unsalted butter, melted

2 cups (300g) plain/all-purpose flour

1/2 cup (100g) white sugar

1/2 tsp baking powder

Pinch of salt

1 egg

1/3 cup (30g) rolled oats (traditional oats, not quick, instant, or steel-cut)

3 to 4 large Granny Smith apples, cut into 0.7 cm dice (about 4 cups)

1/4 cup (35g) plain flour (all-purpose)

1/4 cup (50g) white sugar

1/2 tsp cinnamon

1/4 tsp nutmeg

Instructions

1-Preheat oven to 180ยฐC (350ยฐF). Grease and line an 8-inch (20cm) square pan with parchment paper, leaving an overhang for easy lifting.

2-Mix melted butter, flour, sugar, baking powder, and salt until no dry spots remain. Add the egg and mix well.

3-Press two-thirds of this mixture into the bottom of the pan and bake for 15 minutes until lightly golden. Remove and let cool for 5 minutes.

4-Meanwhile, combine diced apples, flour, sugar, cinnamon, and nutmeg for the apple filling.

5-Add rolled oats to the reserved one-third of the base mixture and mix until mostly incorporated to form the crumble topping.

6-Spread the apple filling evenly over the baked base. Crumble the oat topping mixture over the apples by hand.

7-Bake for 30-35 minutes or until the topping is deep golden.

8-Remove from oven and cool in the pan. Lift out using the parchment paper. Cut into bars.
