– 1/3 cup heavy cream, plus more if needed for the caramel glaze

– 4 tablespoons unsalted butter, cut into chunks for the caramel glaze

– 1/4 teaspoon kosher salt for the caramel glaze

– 3/4 cup sifted powdered sugar, plus more if needed for the caramel glaze

Instructions

1-Preheat oven and prepare pan: Begin by setting your oven to 350Β°F and preparing a 12-cup Bundt pan with butter and flour for easy release. This method helps achieve a golden, moist cake that’s full of flavor.

2-Mix dry ingredients: In a medium bowl, sift together the dry ingredients like flour, cinnamon, baking soda, ginger, salt, black pepper, and allspice to ensure they’re well mixed.

3-Combine wet ingredients: In another bowl, beat the eggs with the granulated sugar and light brown sugar until they’re light and airy, then stir in the applesauce, vegetable oil, and vanilla extract for a smooth batter.

4-Fold dry ingredients into wet: Gently fold the dry mix into the wet ingredients, being careful not to overmix, which keeps the cake tender.

5-Bake the cake: Pour the batter into your prepared pan and bake for about 45 minutes, or until a tester comes out clean. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack.

6-Prepare caramel glaze: For the caramel glaze, combine light brown sugar, heavy cream, unsalted butter, and salt in a saucepan, bring it to a full boil while stirring, and boil for exactly 1 minute.
