– 1 cup water for the flavored ice cubes

– 1/3 cup sugar for the flavored ice cubes

– 2/3 cup sparkling water per serving

Instructions

1-First: focus on the apricot concentrate: wash, pit, and cut 4 pounds of apricots in halves, then place them in a large pot with 1 quart of water and bring to a boil. Simmer on low heat for about 30 minutes until the apricots are soft but not mushy, then strain the mixture through a fine strainer and add 1/3 cup sugar, simmering for 5 more minutes before letting it cool completely.

2-Next, make the blueberry-strawberry ice cubes: wash 2 cups blueberries and 3 cups strawberries, then simmer them in a pot with 1 cup water and 1/3 cup sugar for 20 minutes, stirring occasionally. Strain the mixture, let it cool, and pour it into ice trays to freeze, adding that extra burst of fruit flavors.

3-Finally, to serve, place 1-2 flavored ice cubes in a glass, add about 1/3 cup of the apricot concentrate, and top with about 2/3 cup of sparkling water.
