Ingredients

– 2 pounds apricots for sweetness and texture

– 1 cup cane sugar for preservation

– 2 tablespoons lemon juice for balancing flavor and aiding setting

Instructions

1-Start by preparing the apricots: Halve them, remove the pits, and chop into large chunks. You can leave the skins on for added texture or remove them if you prefer smooth jam.

2-Combine the chopped apricots, 1 cup of cane sugar, and 2 tablespoons of lemon juice in a large pot, stirring well to mix everything together.

3-Heat the mixture on medium-high until it boils, then lower the heat to simmer for 22 to 25 minutes. Stir frequently to keep it from burning and let the fruit break down until it thickens.

4-Once thickened, remove from heat and let it cool at room temperature to set further, then chill in the refrigerator.

5-Transfer the cooled jam into clean glass jars or containers, seal them, and store in the fridge for use within 3 to 4 weeks.
