  • Total Time: 1 hour 20 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

4 large russet potatoes

4 tablespoons olive oil

1.5 tablespoons sea salt for baked potato skins

2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)

2 teaspoons kosher salt

2 tablespoons minced garlic (about 810 cloves)

6 tablespoons butter, softened

2 tablespoons cajun seasoning (low sodium recommended)

4 tablespoons avocado oil, divided

1 1/2 cups heavy cream

2/3 cup grated parmesan cheese

2 tablespoons fresh minced parsley

Juice of 2 lemon wedges

1/2 to 1 teaspoon red pepper flakes

1 teaspoon freshly cracked pepper

2 tablespoons butter additional for sauce

Instructions

1-Getting started: Getting started with this baked potato steak bites recipe is straightforward and fun, taking you from prep to plate in about 1 hour and 20 minutes. Begin by preheating your oven to 425Β°F (220Β°C) and lining a baking pan with parchment paper to make cleanup easy. This step ensures your potatoes bake evenly and develop that irresistible crispy exterior.

2-Prepare the potatoes: Wash and dry the potatoes, then rub them with 4 tablespoons of olive oil and sprinkle all sides with 1.5 tablespoons of sea salt for extra flavor. Place them on the pan without poking holes to keep them fluffy inside, and bake for 50-60 minutes until they’re tender when pierced with a fork. While the potatoes are baking, prepare the steak by trimming any excess fat and cutting 2 lbs of steak into 2-inch pieces.

3-Cook the steak: Drizzle the steak with 2 tablespoons of avocado oil and coat it liberally with 2 tablespoons of cajun seasoning. Heat the remaining 2 tablespoons of avocado oil in a skillet over medium-high heat, then cook the steak undisturbed for about 2 minutes until it’s golden. Flip it once and cook for another minute, reduce the heat, and continue as directed to achieve your preferred doneness.

4-Make the parmesan cream sauce and assemble: Once the steak is done, make the parmesan cream sauce in the same pan by adding 2 more tablespoons of butter and the remaining minced garlic, sautΓ©ing until fragrant. Slowly whisk in 1 1/2 cups of heavy cream and let it simmer, then add the other sauce ingredients to thicken it up. Finally, assemble by loosening the potato insides, adding the steak, and drizzling with sauce.
