Ingredients

– 2 cups all-purpose flour plus 1 tablespoon (to coat blueberries)

– 3/4 teaspoon baking soda

– 1/2 teaspoon kosher salt

– 1 cup granulated sugar

– 1/4 cup softened butter

– 1 cup mashed ripe bananas

– 2 eggs

– 1/3 cup vanilla or plain yogurt

– 1 teaspoon vanilla extract

– 1 1/2 cups fresh blueberries (extra for topping)

Instructions

1-Preheat the oven to 350ยฐF and prepare your loaf pan with cooking spray for easy release. In a medium bowl, mix 2 cups of the flour with baking soda and salt to form the base. In a large bowl, beat the sugar and softened butter until fluffy, then add the mashed bananas, eggs, yogurt, and vanilla extract; blend until smooth.

2-Next, add the flour mixture to the wet ingredients and beat at low speed just until moistened. Gently toss the blueberries in the remaining 1 tablespoon of flour to prevent sinking, then fold them into the batter. Pour the batter into the prepared 8 1/2 x 4 1/2-inch loaf pan, top with extra blueberries, and bake for 60 to 70 minutes until a toothpick comes out clean. Let it cool in the pan for 10 minutes before moving to a wire rack for full cooling.
