Instructions
1-Preheat oven to 350Β°F. Grease and flour a 9.25 x 5.25 x 2.75-inch loaf pan. Lightly roast walnuts, stirring constantly to avoid burning, then chop and cool.
2-Cream the softened butter and sugar (or honey) together until smooth.
3-Mash bananas to a chunky applesauce consistency, then add to the butter mixture along with the beaten eggs and mix until blended.
4-In a separate bowl, whisk together flour, salt, and baking soda, then incorporate into the wet ingredients.
5-Stir in vanilla extract, toasted walnuts, and raisins, if using. Pour batter into prepared pan.
6-Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
7-Allow to rest in the pan for 10 minutes before transferring to a wire rack to cool.
