Ingredients

– 2 Tablespoons unsalted butter

– 3 Tablespoons all-purpose flour

– 3/4 cup whole milk or half-and-half

– 2/3 cup beer (lager preferred)

– 1 teaspoon Worcestershire sauce

– 1 teaspoon dijon mustard

– 1/2 teaspoon garlic powder

– 1/4 teaspoon smoked paprika

– 1/4 teaspoon salt

– 2 and 1/2 cups freshly shredded sharp cheddar cheese (combination of white and sharp cheddar recommended)

Instructions

1-Gather and measure all ingredients, including shredding the cheddar cheese fresh for better results.

2-In a medium saucepan over low heat, melt the unsalted butter and whisk in the all-purpose flour to form a roux, stirring for about 1-2 minutes.

3-Slowly pour in the whole milk or half-and-half and beer, stirring constantly until the mixture thickens and becomes smooth, which takes around 3-5 minutes.

4-Add Worcestershire sauce, dijon mustard, garlic powder, smoked paprika, and salt, blending everything together for even flavor distribution.

5-Gradually mix in the freshly shredded sharp cheddar cheese, stirring on low heat until fully melted and creamy, avoiding any lumps.

6-Remove from heat once the dip is smooth, then transfer to a bowl and serve warm with your favorite dippers.
