Ingredients

– 450 grams ground beef or any ground meat preferred

– Pinch of salt and pepper

– 1 tablespoon avocado oil or avocado oil spray

– 5 small flour tortillas

– ¼ cup mayonnaise for the sauce

– ¼ cup sour cream for the sauce

– ¼ cup plain yogurt for the sauce

– 1 tablespoon tomato paste for the sauce

– 1 tablespoon honey Dijon mustard for the sauce

– 1.5 tablespoons relish or a whole pickle diced for the sauce

– 1 tablespoon pickle juice (optional) for the sauce

– Grated or sliced cheese such as aged or Cheddar for additional toppings

– Finely chopped lettuce for additional toppings

– Finely chopped onion for additional toppings

Instructions

1-First, prepare the sauce by mixing ¼ cup mayonnaise, ¼ cup sour cream, ¼ cup plain yogurt, 1 tablespoon tomato paste, 1 tablespoon honey Dijon mustard, 1.5 tablespoons relish (or a whole pickle diced), and 1 tablespoon pickle juice (if using) in a bowl. Set it aside or pop it in the fridge to let the flavors meld.

2-Next, divide the 450 grams of ground beef into 5 equal portions, about 1/3 to 1/2 cup each, roll them into balls, and set them aside for easy handling.

3-Now, take a small flour tortilla and flatten one meat portion onto it evenly, then lightly season with a pinch of salt and pepper. Repeat this for all 5 tortillas so everything’s ready to go.

4-Heat a non-stick pan over medium-high heat and add 1 tablespoon avocado oil tacos need that golden crisp! Place the tortilla with the meat side down in the pan and cook for 2-3 minutes until it’s nicely golden and caramelized.

5-Once that’s done, flip the tortilla, add grated or sliced cheese, reduce the heat to medium-low, and cover the pan to melt the cheese for about 1 minute. This step makes the tacos extra gooey and irresistible.

6-Finally, remove from heat and top with finely chopped lettuce, finely chopped onion, and a drizzle of the prepared sauce for that finishing touch. Remember, assembling right before serving keeps everything fresh and crunchy your family will love how simple and tasty this is!
