Instructions

1-First, blend the cookies into fine crumbs, saving a few tablespoons for decoration. This step adds the crunchy biscuit base that defines Biscoff Truffles. Next, mix the cookie crumbs with the softened cream cheese and vanilla extract until everything combines into a smooth mixture.

2-Shape the mixture into 1.5-inch balls and place them on wax paper to set. Once done, chill these balls in the refrigerator for one hour to firm them up. Before coating, melt the white chocolate using a microwave or double boiler, stirring frequently to keep it even and silky.

3-Dipping and Decorating Tips: Dip each chilled ball into the melted chocolate with a dipping tool, then set it back on wax paper. Decorate right away with the reserved cookie crumbs or sprinkles before the chocolate hardens. This part is where the magic happens, turning simple ingredients into a gourmet treat. If the chocolate gets too thick, thin it with a bit of vegetable oil for easier dipping.
