Ingredients

– 3 large Bosc pears

– 1 2 teaspoons olive oil

– 2 1/2 ounces blue cheese, crumbled (Danish blue cheese preferred)

– 1/3 cup chopped walnuts

– 3 sprigs fresh thyme, leaves removed from stems

– 1 2 tablespoons honey

– 1/2 teaspoon Aleppo pepper for garnish

– Salt and pepper for seasoning

– Optional garnishes: flaky salt and extra thyme

Instructions

1-To get started: preheat your oven to 400 degrees Fahrenheit. Slice the 3 large Bosc pears in half lengthwise, remove the cores and seeds, then place them cut side down in a cast iron skillet or baking dish. Drizzle with 1 2 teaspoons of olive oil and lightly season with salt and pepper this initial step softens the pears and builds a great base flavor.

2-Prepping and Baking the Pears: After placing the pears in the oven, bake them for 15 minutes to let them get tender. Once that’s done, take them out and flip them cut side up. Now, stuff each half with the 2 1/2 ounces of crumbled blue cheese, 1/3 cup of chopped walnuts, and leaves from the 3 sprigs of fresh thyme this is where the magic happens, blending creamy, crunchy, and herbal notes.

3-Return the stuffed pears to the oven: for another 8 to 10 minutes until the cheese just starts to melt. While they’re finishing up, mix 1 2 tablespoons of honey with 1/2 teaspoon of Aleppo pepper in a small bowl for that sweet and spicy drizzle. Once out of the oven, transfer the pears to a serving platter, drizzle with the spiced honey, and add optional garnishes like flaky salt and extra thyme.
