Instructions

1-Remove stems from 1 pound of button mushrooms and finely chop them to use in the filling.

2-Heat 2 tablespoons of olive oil in a skillet over medium heat.

3-SautΓ© the chopped mushroom stems for 1 minute to soften them.

4-Add 1 finely chopped shallot and 3-4 sprigs of roughly chopped fresh thyme leaves, sautΓ© for about 2 minutes until soft and fragrant.

9-Bake for 12-13 minutes at 400Β°F.
