1 1/3 cups finely grated carrots

2 ounces cream cheese, softened

1 tablespoon butter, softened

1 1/4 cups powdered sugar

1/4 cup plus 2 tablespoons heavy cream

1/2 teaspoon vanilla extract

1/2 cup chopped pecans (optional)

Instructions

1-Prepping the Base: First, preheat your oven to 325Β°F (163Β°C). Mix the crushed graham crackers with melted butter and press it into your springform pan for a solid base.
