– 1/4 cup sour cream and 1/4 cup plain Greek yogurt, or all sour cream if yogurt is unavailable

– 1/2 teaspoon salt, plus more to taste

– 1/4 teaspoon freshly ground black pepper

– 1 clove of garlic added to the dressing for extra flavor

Instructions

1-Dice the cauliflower and place it in a medium salad bowl; a chopper can speed up the chopping process.

2-Cut the cucumber in half lengthwise and thinly slice into half circles using a slicer for faster preparation, then add to the bowl.

3-Finely chop the chives or green onion and add to the salad, including the white parts for a stronger onion flavor if desired.

4-In a separate bowl, mix the sour cream and Greek yogurt with the salt and black pepper; stir this dressing into the salad and adjust salt to taste.

5-Garnish with parsley or dill if desired. This salad is best eaten within a few hours after adding the dressing.
