πŸ₯¦ This Cauliflower Cucumber Tomato Salad provides a fresh, crunchy texture perfect for a light and healthy meal.
πŸ… The combination of raw vegetables with a creamy dressing adds rich flavor while keeping preparation quick and simple.

  • Total Time: 15 minutes

Ingredients

Scale

1 medium head cauliflower

1/2 English cucumber (ends trimmed, no need to peel) or 2 small cucumbers

1 large or 2 medium cloves garlic (pressed)

3 tablespoons mayonnaise

3 tablespoons ranch dressing

1 to 1 1/2 cups cherry or grape tomatoes

Instructions

1-Chop the cauliflower into small pieces, about 1/4 to 1/2 inch, and place them in a large bowl for easy mixing.

2-Dice the cucumber and add it to the bowl, ensuring even distribution for balanced bites.

3-Cut the tomatoes into halves or quarters and toss them in with the other veggies.

4-Press the garlic over the vegetables to infuse a fresh, aromatic flavor.

5-In a separate bowl, mix together the 3 tablespoons of mayonnaise and 3 tablespoons of ranch dressing until smooth.

6-Stir the dressing into the salad and mix well to coat everything evenly.

7-Refrigerate the salad until you’re ready to serve, and remember leftovers taste great the next day after a quick stir.

Notes

🌿 Slight steaming of cauliflower softens and sweetens it for a creamier texture.
πŸ₯— Substitute dressings for variation, but note flavor changes with oil-based dressings.
πŸ§„ Using raw cauliflower keeps a fresh crunch and highlights the vegetable’s natural taste.
