  • Total Time: 1 hour 4 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

2 cups cooked chicken breast (diced) or boneless skinless chicken breasts

Salt, pepper, and Italian seasoning to taste for seasoning the chicken

3 cups chicken broth

2 tablespoons olive oil

1 cup white long grain rice

3 cups fresh or thawed frozen broccoli florets

One 10.5-ounce can of condensed cream of chicken soup (or substitute with cream of broccoli, cheddar cheese, or broccoli cheese soup)

1 cup milk (any fat content)

Β½ cup sour cream (which may be substituted with mayonnaise)

1Β½ cups shredded cheddar cheese (use freshly shredded for the best melt)

2 tablespoons butter for cooking the chicken

1 cup crushed crackers for the crispy topping

4 tablespoons melted butter for mixing with the crackers

Optional seasonings like thyme and garlic powder to taste

Instructions

1-First, cook the chicken in 2 tablespoons of butter until it’s golden, then set it aside. This step adds flavor and ensures the chicken is tender.

2-Next, simmer 3 cups of chicken broth, 2 tablespoons of olive oil, and 1 cup of white long grain rice in a pot, covered, for 6 minutes. After that, add 3 cups of broccoli florets and cook for another 9 minutes until the rice is tender and the liquid is absorbed.

3-Remove the pot from heat and let it stand covered for 10 minutes. Then, mix in the cooked chicken, the condensed soup, 1 cup of milk, Β½ cup sour cream, optional seasonings like thyme and garlic powder, and half of the 1Β½ cups shredded cheddar cheese.

4-Transfer the mixture to a greased 9 x 13-inch baking dish, top with the remaining cheese, and bake covered at 350Β°F for 15 minutes.

5-For the crispy topping, mix 1 cup of crushed crackers with 4 tablespoons of melted butter, spread it over the casserole, and bake uncovered for an additional 10 minutes. Let it cool slightly before serving to 6 people.
