Instructions
1-First, cook the chicken in 2 tablespoons of butter until it’s golden, then set it aside. This step adds flavor and ensures the chicken is tender.
2-Next, simmer 3 cups of chicken broth, 2 tablespoons of olive oil, and 1 cup of white long grain rice in a pot, covered, for 6 minutes. After that, add 3 cups of broccoli florets and cook for another 9 minutes until the rice is tender and the liquid is absorbed.
3-Remove the pot from heat and let it stand covered for 10 minutes. Then, mix in the cooked chicken, the condensed soup, 1 cup of milk, Β½ cup sour cream, optional seasonings like thyme and garlic powder, and half of the 1Β½ cups shredded cheddar cheese.
4-Transfer the mixture to a greased 9 x 13-inch baking dish, top with the remaining cheese, and bake covered at 350Β°F for 15 minutes.
5-For the crispy topping, mix 1 cup of crushed crackers with 4 tablespoons of melted butter, spread it over the casserole, and bake uncovered for an additional 10 minutes. Let it cool slightly before serving to 6 people.
