– 1 lb button or cremini mushrooms, sliced
– 1 small onion, grated on large holes
– 2 large eggs
– 1/2 cup Panko bread crumbs
– 2 tablespoons olive oil for sautΓ©ing mushrooms plus more for cooking patties
– 1 1/2 teaspoons salt and 1/2 teaspoon pepper, or to taste
– 1/2 cup flour for dredging the patties
Instructions
1-First, finely chop the mushrooms, grate the onion, and gather all other items. SautΓ© the mushrooms over medium-high heat until they soften and brown lightly, then mince them finely using a food processor or by hand.
2-In a large bowl, mix the ground chicken, finely chopped mushrooms, grated onion, eggs, bread crumbs, salt, and pepper until everything blends well.
3-Portion the mixture into heaping tablespoons, coat each in flour on both sides, and shape into oval patties or round sliders. Tap off any excess flour to keep them from getting too dry.
4-Heat 2-3 tablespoons of oil in a nonstick skillet over medium heat, add the patties, and cook covered until golden, about 4 minutes on the first side and 2-3 minutes on the second. Clean the skillet between batches and add more oil as needed.
5-Once done, remove the patties and let them rest for a bit before serving warm with your favorite sides.
