Instructions

1-Getting started with this chicken and mushroom salad: Begin by seasoning both sides of the chicken breast with salt and pepper, then sauté it in 2 tablespoons of olive oil over medium heat until it’s golden brown and fully cooked. Let the chicken rest for at least 10 minutes to stay juicy before dicing it into strips and small pieces, then move it to a medium salad bowl to cool.

2-Next, in the same skillet, sauté the mushrooms, cut into large dice, over medium-high heat until all the water evaporates and they turn golden brown; season them with salt and pepper before adding to the bowl. Grate the carrots and finely dice the onion, then sauté them in 2 tablespoons of olive oil over medium heat until they’re softened and golden, and add them to the bowl to cool. Finely dice the baby dill pickles and mix them in too.
