🍪 Delight in a homemade cookie cake that’s soft, chewy, and full of rich chocolate chips.
🎉 Perfect for celebrations or everyday treats, this recipe is easy to make and customizable with frosting and decorations.

  • Total Time: 34-36 minutes
  • Yield: 12 servings

Ingredients

– ½ cup unsalted butter (melted)

– ½ cup light brown sugar (packed)

– ¼ cup granulated sugar

– 1 large egg

– 1½ teaspoons vanilla extract

– ½ teaspoon baking soda

– ¼ teaspoon baking powder

– ¼ teaspoon salt

– 1½ cups all-purpose flour

– 1 cup semi-sweet chocolate chips (½ cup chopped, ½ cup whole)

– ¼ cup unsalted butter (softened to room temperature)

– 1¼ cups powdered sugar

– ¾ teaspoon vanilla extract

– Pinch of salt

– 1-2 tablespoons milk

Instructions

1-First, preheat the oven to 350°F and prepare your pan by greasing an 11-inch metal round pan or lining it with parchment paper. Then, chop half of the chocolate chips into small pieces while keeping the other half whole for the best texture.

2-Next, melt the butter in the microwave for 20-30 seconds until it’s just melted, then mix it in a large bowl with the granulated sugar and light brown sugar using a spatula. Add the egg and vanilla extract, stirring until everything combines smoothly.

3-After that, incorporate the baking soda, baking powder, and salt into the mixture. Gradually add the flour and mix until no dry spots remain, then fold in the chopped and whole chocolate chips for even distribution.

4-Press the dough into your prepared pan to about ½ inch thickness, making sure to cover the corners and separate any chocolate chip clumps. Bake for 12-14 minutes until the top is slightly brown but the center is still a bit soft for that chewy feel.

5-Let the cake cool completely on a rack before removing it from the pan run a knife around the edges and flip it onto a plate. If you’re adding frosting, beat the softened butter until smooth, then mix in powdered sugar, vanilla, salt, and milk until creamy. Pipe it on and decorate as desired before slicing and serving.

Notes

🍫 Use melted butter and mix by hand for a dense, chewy texture and easier spreading.
🍰 Press dough to about 1/2 inch thickness; thinner results in crispier cake, thicker requires longer baking.
⏰ Avoid overbaking to keep cookie cake soft and chewy with a slightly underbaked center.
