Ingredients
– 1/2 cup (110g) unsalted butter [Coconut oil for vegan]
– 1 1/2 tbsp white miso paste
– 1/2 cup (100g) granulated sugar
– 1/2 cup (100g) dark brown sugar, packed
– 1 tsp vanilla extract
– 1 large egg [Flaxseed meal mix for vegan]
– 1 1/4 cup (165g) all-purpose flour [Gluten-free blend]
– 1/2 tsp baking powder
– 1/4 tsp baking soda
– 1/4 tsp salt
– 6 oz (170g) 70-80% cocoa dark chocolate, chopped
– 3 tbsp white sesame seeds
Instructions
1-Melt the butter over medium heat until browned.
2-Whisk the browned butter with miso paste and set aside.
3-Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
4-In a bowl, combine flour, baking powder, baking soda, and salt.
5-In a large bowl, whisk granulated sugar, dark brown sugar, and miso brown butter until blended.
6-Add egg and vanilla extract and whisk vigorously until pale and creamy.
7-Fold in dry ingredients gently, then fold in chopped dark chocolate.
8-Scoop dough into 2 oz or 1/4 cup portions.
9-Press tops of dough balls into sesame seeds to cover.
10-Place 4 cookies spaced apart on the baking sheet and bake 11-13 minutes until edges are lightly golden and centers are slightly underdone.
11-Let cookies rest on the baking sheet 5 minutes, then transfer to a cooling rack. Repeat with remaining dough.
12-Cool cookies 20-30 minutes before serving.
