Ingredients

– 2Β½ cups all-purpose flour

– 2 teaspoons baking powder

– 3/4 teaspoon fine sea salt

– 2 sticks (226 grams) unsalted butter at cool room temperature (around 67Β°F)

– 1ΒΌ cups (250 grams) granulated sugar

– ΒΌ cup (50 grams) granulated sugar for rolling the dough balls

– 1 large egg plus 1 egg yolk both at room temperature

– 1 teaspoon vanilla extract

Instructions

1-Preheat the oven to 350Β°F and line baking sheets with parchment paper.

2-In a medium bowl, whisk together the 2Β½ cups all-purpose flour, 2 teaspoons baking powder, and 3/4 teaspoon fine sea salt.

3-In a large bowl, beat the 2 sticks (226 grams) unsalted butter with 1ΒΌ cups (250 grams) granulated sugar until light and fluffy, about 2 to 3 minutes. Add the 1 large egg, 1 egg yolk, and 1 teaspoon vanilla extract, mixing well. Gradually beat in the flour mixture until fully combined.

4-Roll the dough into 3-tablespoon balls, then roll each ball in the remaining ΒΌ cup (50 grams) granulated sugar. Place the balls 2 inches apart on the prepared baking sheets and flatten them slightly with the bottom of a measuring cup.

5-Bake for 10 to 12 minutes, until the cookies are set, starting to brown at the edges, and still slightly soft in the center. Let them cool for 5 minutes on the baking sheets before transferring to a wire rack to cool completely.
