Ingredients

– 8 fresh mint leaves

– 1 lime wheel, cut in half

– 2 teaspoons lime simple syrup or plain simple syrup

– 3 ounces coconut rum or regular white rum

– 1 ounce cream of coconut (which can be substituted with coconut milk or coconut water for a lighter option)

– 3 ounces club soda

– Extra lime juice to taste

– 1 lime wheel for optional garnish

– 1 sprig of mint for optional garnish

– 1 teaspoon flaked coconut for optional garnish

Instructions

1-Place the 8 fresh mint leaves and the halved lime wheel in a tall glass, then gently muddle them to release the mint oils and lime juice without shredding the leaves.

2-Fill the glass halfway with ice.

3-In a cocktail shaker filled with ice, add the 2 teaspoons of simple syrup, 3 ounces of coconut rum (or white rum), and 1 ounce of cream of coconut.

4-Shake the mixture for 20 seconds, then strain it into the glass.

5-Top off with the 3 ounces of club soda and stir gently. Add extra lime juice to taste for flavor adjustment.

6-Garnish with a lime wheel, a sprig of mint, and 1 teaspoon of flaked coconut if desired.
