Ingredients
– 1 cup sugar
– 5 tablespoons unsalted butter
– 1 cup mashed ultra-ripe bananas
– 1/4 cup milk
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour

– 1/2 teaspoon salt
– 1/2 cup chopped nuts
– 1.5 cups coarsely chopped fresh cranberries
– 2 cups sifted confectioners’ sugar for optional vanilla icing
– 3 or more tablespoons heavy cream for optional vanilla icing
– 1 teaspoon pure vanilla extract for optional vanilla icing
Instructions
1-Preheat the oven to 350ยฐF (175ยฐC) and place the oven rack in the center.
2-Grease an 8 1/2 by 4 1/2-inch loaf pan or line it with parchment paper.
3-In a medium bowl, blend sugar and softened butter until combined.
4-Add mashed bananas, milk, vanilla extract, and eggs; mix well.
5-Stir in the flour, baking powder, and salt just until moistened.
6-Fold in chopped nuts and cranberries.
7-Spread the batter evenly in the loaf pan.
8-Bake for 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean.
9-Remove the bread from the pan and cool on a wire rack.
10-For optional icing, sift confectioners’ sugar into a bowl, gradually add heavy cream until desired consistency, stir in vanilla extract, and drizzle over cooled bread.
