– 4 cups corn kernels (drained if canned)
– 1 small onion, diced
– 3 tablespoons butter
– 2 tablespoons flour
– Salt and black pepper to taste
– 1 ΒΌ cup milk
– ΒΎ cup heavy whipping cream
– 2 teaspoons granulated sugar
– 2 sprigs fresh thyme or β teaspoon dried thyme
Instructions
1-In a saucepan over medium heat, cook diced onion in butter until translucent, about 4 minutes.
2-Add flour, salt, and pepper, cooking for 2-3 minutes while stirring to form a roux.
3-Stir in corn kernels and mix well.
4-Add milk, cream, sugar, and thyme, stirring until the mixture comes to a boil and thickens. Let boil for 1 minute while stirring.
5-Remove 1 cup of the corn mixture and blend until smooth, then stir it back into the pan.
6-Taste and season with additional salt and pepper if needed.
