Instructions
1-Cook the 8 oz. dry penne pasta according to package directions; drain and set aside.
2-Heat 1 tbsp. olive oil in a large skillet over medium heat for 2-3 minutes until shimmering.
3-Add 1 lb. cubed skinless boneless chicken breasts or thighs, then sprinkle evenly with 1 tsp. Italian seasoning, 1/2 tsp. kosher salt, 1/2 tsp. black pepper, 1/2 tsp. paprika, and 1/4 tsp. garlic powder.
4-Cook the chicken for about 7 minutes until golden and cooked through.
5-Add 2 tbsps. butter and 6 cloves minced garlic; sautΓ© for 1 minute until fragrant.
6-Pour in 1 cup low-sodium chicken broth, scraping the pan bottom to loosen browned bits; bring to a gentle simmer.
7-Add the cooked penne pasta to the skillet and toss to coat with the broth and chicken.
8-Stir in 1 cup heavy cream and 1/2 cup shredded Parmesan cheese; toss until the sauce thickens and coats everything evenly.
9-Sprinkle with 2 tbsps. chopped parsley before serving.
