๐Ÿค Restaurant-quality creamy shrimp dish with rich flavors of garlic, sun-dried tomatoes, and fresh spinach
๐Ÿ‡ฎ๐Ÿ‡น Classic Tuscan-inspired flavors come together in a quick yet elegant meal perfect for weeknight dinners

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

– 1 pound (approximately 450 grams) of shrimp (31-40 count size, thawed and peeled with tails optional)

– 2 tablespoons of butter

– 1 teaspoon of flour

– 4-5 cloves of minced garlic

– 1 cup (240 ml) of heavy cream or whipping cream

– 1/2 teaspoon of lemon juice

– 1/4 teaspoon of Italian seasoning

– 1/4 cup (about 30 grams) of chopped or julienned sun-dried tomatoes

– 1 to 2 cups (packed) of fresh baby spinach

– A handful of fresh basil cut into thin strips

– Salt and pepper to taste

Instructions

Step 1: Prep Your Ingredients First, gather and prepare everything: Thaw, peel, and devein the shrimp if needed, mince the garlic, chop the sun-dried tomatoes, and wash the spinach and basil. Having all items ready helps everything come together quickly without any rush.

Step 2: Cook the Shrimp Heat the butter in a large skillet over medium heat. Add the shrimp, seasoned with salt and pepper, and cook for 2-3 minutes per side until they turn pink and opaque. Once done, set the shrimp aside to keep it tender.

Step 3: Build the Sauce In the same skillet, add the minced garlic and sautรฉ for about 1 minute until fragrant. Stir in the flour to help thicken the sauce, then pour in the heavy cream, lemon juice, and Italian seasoning. Let it simmer gently.

Step 4: Add Vegetables Next, mix in the sun-dried tomatoes and baby spinach, cooking until the spinach wilts, which takes 2-3 minutes. Add the fresh basil strips and stir well to blend the flavors.

Step 5: Combine and Finish Return the cooked shrimp to the skillet and toss everything in the creamy sauce for 1-2 minutes to warm through. Taste and adjust seasoning with more salt and pepper if desired. Serve hot, perhaps over pasta for a complete meal, adapting for dietary needs as mentioned earlier.

Notes

๐Ÿค Don’t overcook the shrimp – they become tough and rubbery when cooked too long
๐ŸŒฟ Use fresh baby spinach for best results as it wilts quickly and maintains vibrant color
๐Ÿงก Sun-dried tomatoes packed in oil add extra richness, but drain them well before adding
