Ingredients
– 1 1/2 pounds small red potatoes for main base for crisp texture
– 1 tablespoon unsalted butter adds richness and flavor
– 2 tablespoons olive oil ensures even crisping
– Salt and pepper, to taste for basic seasoning
– 2 tablespoons chopped chives fresh garnish
Instructions
1-Heat the skillet with the butter and olive oil until hot, then arrange the potatoes cut-side-down in a single layer. Cook uncovered for 8-10 minutes until a golden brown crust forms on the bottom.
2-Turn the potatoes, cover the skillet, and cook for another 5 minutes until golden on the second side. Be careful when lifting the lid to avoid splatters.
3-Turn them again, cover, and cook for 5 more minutes or until easily pierced with a knife. Remove from heat, sprinkle with salt and pepper, toss with chives, and garnish with extra chives.

🥔 The thin skins of small red potatoes do not need peeling and add extra crispness.
🍳 Use a cast iron skillet for even heating and great crust development.
🌿 Enhance flavor by adding minced garlic, shallots, or fresh rosemary; substitute butter with ghee for richness.
