Instructions

1-Heat the skillet with the butter and olive oil until hot, then arrange the potatoes cut-side-down in a single layer. Cook uncovered for 8-10 minutes until a golden brown crust forms on the bottom.

2-Turn the potatoes, cover the skillet, and cook for another 5 minutes until golden on the second side. Be careful when lifting the lid to avoid splatters.

3-Turn them again, cover, and cook for 5 more minutes or until easily pierced with a knife. Remove from heat, sprinkle with salt and pepper, toss with chives, and garnish with extra chives.
