πŸ₯– This Ensaymada Recipe produces soft and sweet Filipino brioche that’s perfect for any occasion.
🧈 Its rich buttery dough and creamy cheese topping make it a delightful treat for breakfast or snack time.

  • Total Time: 1 hour 5 minutes plus rising time
  • Yield: 16 ensaymadas

Ingredients

– 1 cup milk

– 1/3 cup sugar

– 1/2 cup shortening, softened to room temperature

– 1 envelope active dry yeast (7-9 grams or 1 tablespoon), proofed in 1/4 cup warm water (or instant yeast alternative)

– 3 1/2 cups flour

– 3 egg yolks

– 1/4 tablespoon salt

– 1/4 cup butter, softened to room temperature (for brushing)

– 1/2 cup butter, softened to room temperature (for toppings)

– 1/2 cup powdered sugar (for toppings)

– 1 cup grated cheese (or favorite grated cheese for toppings)

Instructions

1-First: combine 1 cup milk, 1/2 cup shortening, 1/3 cup sugar, and 1/4 tablespoon salt in a mixing bowl to kick things off. This mixture sets the base for a flavorful dough, so mix at medium speed for 3-5 minutes after adding half the flour and the proofed yeast.

2-Then, incorporate 3 egg yolks and the rest of the 3 1/2 cups flour, mixing for another 3 minutes until it’s sticky but workable.

3-Once mixed, scrape the dough into a greased bowl, cover it, and let it rise in a warm spot for 2-3 hours until doubled.

4-For the next part, tip the dough onto a floured surface, roll it into a log, and cut it into 16 even slices.

5-Roll each slice into an 8Γ—4 inch rectangle, brush with 1/4 cup softened butter, and shape into coils before letting them rise again for 30 minutes to 1 hour.

6-Bake in a preheated 300Β°F oven for 20-25 minutes, then cool and top with a cream of 1/2 cup softened butter mixed with 1/2 cup powdered sugar, finished with 1 cup grated cheese.

Notes

πŸ₯š Dough is initially sticky but becomes elastic; avoid using excess flour.
⏳ Dough can be prepared a day ahead; refrigerate after kneading and rest before shaping.
✨ Shortening yields a fluffier texture than butter, though butter can add richer flavor.
