Instructions
1-Wash and thinly slice the cucumbers and red onion using a mandoline or a sharp knife to get even, paper-thin slices.
2-In a large bowl, toss together the cucumber, onion, vinegar, honey, and salt until everything is evenly coated.
3-Chill the mixture for 20 minutes to let the cucumbers release water and absorb the dressing flavors.
4-After chilling, transfer the salad to a serving bowl, leaving behind any excess water to avoid sogginess.
5-Sprinkle with the fresh dill, add chives if you like, and season with freshly ground black pepper before serving.
