๐ŸŒถ๏ธ Enjoy a flavorful blend of cheesy and spicy with this hearty Chili Frito Casserole that’s perfect for family meals.
๐Ÿง€ This recipe offers a satisfying comfort food experience with layers of crunchy corn chips, savory chili, and melted cheese.

  • Total Time: 50 minutes
  • Yield: 6-8 servings

Ingredients

– 1 pound ground beef

– 1 small chopped onion

– 4 ounces chopped green chiles (from 1 can)

– 4 ounces sliced black olives (from 1 can)

– 16 ounces chili (from 1 can)

– 16 ounces chili beans (from 1 can)

– 15 ounces corn, drained (from 1 can)

– 1 cup salsa

– 1 tablespoon taco seasoning

– 10.5 ounces corn chips (from 1 bag)

– 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Instructions

1-Cook 1 pound ground beef and 1 small chopped onion in a large skillet until the beef is browned and the onions are transparent. Drain excess grease if needed to keep the dish from becoming too oily.

2-Stir in 4 ounces chopped green chiles, 4 ounces sliced black olives, 16 ounces chili, 16 ounces chili beans, 15 ounces corn (drained), 1 cup salsa, and 1 tablespoon taco seasoning; simmer for about 10 minutes, stirring often to blend the flavors.

3-Crush the 10.5 ounces corn chips and spread half evenly in a 9ร—13-inch deep baking dish for the base layer.

4-Add the beef mixture on top of the crushed corn chips to build the hearty middle.

5-Top with the remaining crushed corn chips for that extra crunch.

6-Bake for 25 minutes until everything is heated through.

7-Add 2 cups shredded cheese on top and bake for another 10 minutes or until the cheese is melted and bubbly.

Notes

๐Ÿณ Use lean ground beef and drain grease for a less greasy casserole.
๐ŸŒถ๏ธ Adjust heat by adding diced tomatoes with green chiles, pepper jack cheese, or hot sauce.
โ„๏ธ Assemble ahead and refrigerate up to 24 hours or freeze without the top crunch layers for up to 3 months.
