πŸ“ Enjoy a delightful and colorful Fruit Pizza with a soft sugar cookie crust and creamy topping.
🍰 This recipe combines fresh fruits and rich cream cheese frosting, perfect for a refreshing and impressive dessert.

  • Total Time: 1 hour 30 minutes
  • Yield: 10-12 servings 1x

Ingredients

Scale

1 and 1/2 cups all-purpose flour

1 and 1/2 teaspoons cornstarch

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter (softened)

3/4 cup granulated sugar

1 large egg (room temperature)

1 teaspoon pure vanilla extract

8 ounces full-fat brick cream cheese (softened to room temperature)

3 tablespoons unsalted butter

1 and 1/4 cups confectioners’ sugar

1 teaspoon pure vanilla extract

3 cups assorted sliced fresh fruit (such as apples, nectarines, peaches, grapes, kiwi, plums, cantaloupe, mangoes, oranges, pineapple, and fresh berries)

Instructions

1-Preheat your oven: to 350Β°F. Prepare your baking sheet by greasing a pizza pan without holes or air vents to keep the dough in place.

2-In a medium bowl, whisk together 1 and 1/2 cups all-purpose flour, 1 and 1/2 teaspoons cornstarch, 1 teaspoon baking powder, and 1/4 teaspoon salt.

3-In another bowl, beat 1/2 cup softened unsalted butter and 3/4 cup granulated sugar until creamy, about 3 minutes. Add 1 large room-temperature egg and 1 teaspoon pure vanilla extract, then mix well.

4-Gradually add the dry ingredients to the wet ones and mix on low until combined. Cover the dough and chill for 20 minutes up to 1 day. If chilled longer, let it sit at room temperature for 20-30 minutes.

5-Press the chilled dough onto the pan in a 9 10-inch circle, about 1/3-inch thick. Bake for 17 19 minutes until the edges are lightly browned, then let the crust cool completely.

6-In a bowl, beat 8 ounces softened full-fat brick cream cheese and 3 tablespoons unsalted butter until smooth. Add 1 and 1/4 cups confectioners’ sugar and 1 teaspoon pure vanilla extract, then beat until creamy.

7-Spread the mixture over the cooled crust and arrange 3 cups of sliced fresh fruit on top in your favorite design.

8-Cut into slices and serve. Store leftovers in the fridge for up to 3 days.
