12 tablespoons oil for dough, plus enough additional oil for deep frying

1 cup cooked red or black beans

1/2 cup chopped onion (white, red, or yellow)

1 teaspoon finely chopped garlic

1 tablespoon oil

1/4 cup thick tomato puree or passata

1 teaspoon paprika powder

1/2 teaspoon cayenne powder

1/2 teaspoon cumin powder

1 teaspoon salt or to taste

1/4 cup water to adjust consistency

1 tablespoon finely chopped fresh cilantro

1 avocado, peeled and cubed

1/2 cup sweet corn (fresh, frozen, or canned)

1 large or 2 small chopped tomatoes

1/2 cup chopped spring onion (can substitute with other onions)

1 finely chopped jalapeno (can reduce to half for less heat)

1 to 2 tablespoons lime or lemon juice to sprinkle on avocado to prevent browning

1 clove finely chopped garlic (optional)

1/2 teaspoon salt or to taste

1/2 teaspoon pepper powder or to taste

2 tablespoons chopped fresh cilantro

1/2 cup sliced olives

1/2 cup sour cream or guacamole

1/2 to 1 cup cheese (such as cheddar or feta)

6 tablespoons maple butter or honey butter

powdered sugar for sprinkling

Instructions

1- In a bowl, mix 2 cups of all-purpose flour, 3/4 tablespoon of baking powder, and 1/2 teaspoon of salt (or to taste).

2- Add 1-2 tablespoons of oil and rub it into the flour mixture.

3- Gradually add 3/4 cup (up to 1 cup) of warm water to form a soft dough, ensuring it is neither too hard nor too soft; avoid over-kneading.

4- Let the dough rest for 10 to 30 minutes.

5- Heat enough oil in a deep fryer, wok, or pan for deep frying.

6- Divide the dough into 6 portions and shape each into a ball.

7- Flatten each ball into a circle about 3 to 4 inches in diameter, using a rolling pin or by hand, and dust with extra flour as needed.

8- Prick the dough with a fork or make slits with a knife all over to prevent excessive puffing.

9- Fry each piece until golden brown on both sides, about a few minutes per side.

10- Drain excess oil by placing the fry bread in a colander.

11-Preparing the Toppings: Once your fry bread is ready, whip up the toppings. For refried beans, heat 1 tablespoon of oil in a pan, add 1/2 cup of chopped onion and sautรฉ until soft and translucent, then add 1 teaspoon of finely chopped garlic and cook briefly. Stir in 1/4 cup of thick tomato puree and cook for a short time, followed by 1 teaspoon of paprika powder, 1/2 teaspoon of cayenne powder, 1/2 teaspoon of cumin powder, 1 teaspoon of salt (or to taste), and 1/4 cup of water. Cook for a few minutes until flavors blend, then stir in 1 tablespoon of finely chopped fresh cilantro.

12-Preparing the Toppings: For avocado corn salsa, toss 1 peeled and cubed avocado with 1 to 2 tablespoons of lime or lemon juice. Add 1/2 cup of sweet corn, 1 large or 2 small chopped tomatoes, 1/2 cup of chopped spring onion, 1 finely chopped jalapeno (or half for less heat), 1 clove of finely chopped garlic (if using), 1/2 teaspoon of salt (or to taste), 1/2 teaspoon of pepper powder (or to taste), and 2 tablespoons of chopped fresh cilantro. Mix gently.

13-Serving Suggestions: To serve as Indian tacos, spread the refried beans on the fry bread, add the avocado corn salsa, and garnish with 1/2 cup of sliced olives, 1/2 cup of sour cream or guacamole, and 1/2 to 1 cup of cheese. For the sweet version, spread 6 tablespoons of maple butter or honey butter over the fry bread, sprinkle with powdered sugar, and optionally add fresh fruit or cream cheese. The whole process, from dough to table, takes about 35 to 60 minutes.
