Ingredients
– 1 lb Italian sausage sliced into bite-sized pieces
– 2 tbsp unsalted butter
– 4 cloves garlic minced
– 12 oz rigatoni or pasta of choice
– 1 cup heavy cream
– 1 cup freshly grated Parmesan cheese
– Salt and black pepper to taste
– Fresh parsley chopped for garnish
– ΒΌ cup reserved pasta cooking water
Instructions
1-Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Before draining, reserve ΒΌ cup of the pasta cooking water. Drain the pasta.
2-Heat a large skillet over medium heat. Add the sausage bites and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the sausage from the skillet and set aside.
3-In the same skillet, melt the butter over medium heat. Add the minced garlic and sautΓ© for 1-2 minutes until fragrant.
4-Reduce the heat to low. Pour in the heavy cream and bring to a gentle simmer. Stir in the freshly grated Parmesan cheese, constantly stirring until the cheese is fully melted and the sauce is smooth and creamy. Season with salt and black pepper to taste.
5-Add the cooked pasta and the cooked sausage bites back into the skillet with the sauce. Toss everything together until well coated. If the sauce is too thick, add the reserved pasta water, a little at a time, until the desired consistency is reached.
6-Garnish with chopped fresh parsley and extra Parmesan cheese before serving.
