1/3 cup milk

1 teaspoon Italian seasoning, or to taste

1/2 teaspoon ground black pepper

3/4 cup ketchup for the glaze

1 1/2 teaspoons white vinegar for the glaze

2 tablespoons brown sugar for the glaze

1/2 teaspoon garlic powder for the glaze

1/2 teaspoon onion powder for the glaze

Instructions

1-First, preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or foil. This helps with cleanup and ensures even cooking. Heat 1 teaspoon oil in a medium skillet over medium heat, then sauté the chopped onion for 5-7 minutes until it’s softened and golden. Set it aside to cool for a bit.

2-Next, in a large bowl, combine the ground beef, sautéed onion, salt, eggs, garlic, ketchup, parsley, breadcrumbs, milk, Italian seasoning, and pepper. Mix gently until just combined to keep the meat tender. Shape the mixture on the baking sheet into a loaf about 8 inches long, 4 inches wide, and 3 inches tall.

3-Bake uncovered for 40 minutes at 350°F. While it’s baking, mix all the glaze ingredients ketchup, white vinegar, brown sugar, garlic powder, and onion powder in a small bowl until combined. After the initial bake, spread the glaze evenly over the meat loaf.

4-Return it to the oven and bake for an additional 20 minutes, or until the internal temperature reaches 160°F. Let the meat loaf rest for 10-15 minutes before slicing to lock in the juices. To adapt for dietary needs, use plant-based meat substitutes for vegan options or gluten-free breadcrumbs as mentioned earlier.
