Ingredients

– 3/4 cup granulated sugar (alternatives include brown sugar, maple syrup, or monk fruit sweetener)

– Pinch of salt

– 2 large eggs beaten (vegan options: chia or flax eggs, or egg replacer)

– 1 teaspoon pure vanilla extract (optional)

– 1 1/2 cups gluten-free all-purpose flour with xanthan gum (if your flour blend does not contain xanthan gum, add 1/4 teaspoon separately)

– 1/4 teaspoon xanthan gum (omit if included in the flour blend)

Instructions

1-Preheat oven to 350ยฐF (177ยฐC). Grease a 4×8 inch loaf pan with cooking spray to prevent sticking.

2-In a bowl, mash bananas until smooth for that natural sweetness and moisture.

3-Stir in baking soda to help the bread rise properly.

4-Mix in melted butter to add richness and keep the texture soft.

5-Add sugar, salt, beaten eggs, and vanilla extract; blend well to combine all flavors.

6-Incorporate gluten-free flour and xanthan gum; mix until just combined to avoid a dense loaf.

7-Pour batter into the prepared loaf pan and smooth the top for even baking.

8-Bake on the middle oven rack for 50 minutes to 1 hour, or until a toothpick inserted in the center comes out clean (baking time may vary based on your oven).
