– 1 tbsp extra virgin olive oil

– 3 tbsp Greek yogurt, preferably full fat

– 1 1/2 tbsp dried oregano

– 1 tsp salt

– Black pepper to taste

– 2 cucumbers (to yield about 1/2 to 3/4 cup grated cucumber after squeezing out juice)

– 1 1/4 cups Greek yogurt, preferably full fat

– 1 tbsp lemon juice

– 1 tbsp extra virgin olive oil (adjust for richer taste)

– 1 garlic clove, minced

– 1/4 tsp salt

– Black pepper to taste

– 3 tomatoes, deseeded and diced

– 3 cucumbers, diced

– 1/2 red onion, finely chopped

– 1/4 cup fresh parsley leaves (optional)

– Salt and pepper to taste

– 4 to 6 pita breads or flatbreads, preferably warmed

Instructions

1-First, mix the marinade ingredients in a resealable plastic bag and add the chicken thighs, coating them well. Let it sit in the fridge for at least 2 hours to soak up all that goodness.

2-While it marinates, whip up the tzatziki by grating and squeezing the cucumbers, then blending them with yogurt and other ingredients for a creamy dip.

3-Next, heat your grill or pan and cook the chicken for 2 to 3 minutes per side until it’s golden and juicy. Don’t forget to let it rest for 5 minutes afterward.

4-Finally, assemble everything on warmed pita with salad and tzatziki for a wrap that’s bursting with flavor.
