Ingredients

– 3 pounds small yellow potatoes, scrubbed

– 1 tablespoon salt

– 1/2 cup chopped red onions or shallots

– 3 green onions, trimmed and thinly sliced

– 1/2 cup chopped dill

– 1/2 cup pitted and halved Kalamata olives

– 1/4 cup red wine vinegar

– 2 teaspoons Dijon mustard

Instructions

1-Wash and boil the baby potatoes in salted water for 15-20 minutes until tender but firm. Drain and let cool.

2-While potatoes cool, prepare vegetables by slicing red onion thinly and chopping fresh parsley.

3-In a large mixing bowl, combine cooled potatoes with olives, red onion, and parsley.

4-Crumble feta cheese into the mixture, ensuring even distribution.

5-Whisk together olive oil, red wine vinegar, and dried oregano to create the dressing.

6-Pour dressing over the potato mixture and toss gently to coat all ingredients evenly.

7-Season with salt and freshly ground black pepper to taste, adjusting the flavor balance.
