Ingredients
2 medium zucchini (green or yellow), sliced into 1/3-inch rings

1/2 bunch fresh parsley
1/2 bunch fresh cilantro
Instructions
1-Prepare the marinade: Prepare the marinade by placing all ingredients except the cilantro, parsley, and vegetables into a food processor. Pulse 5 to 7 times to mince the garlic.
2-Add the cilantro and parsley: Add the cilantro and parsley, then pulse a few more times until the herbs are chopped but not pureed.
3-Rinse, dry, and slice the vegetables: Rinse, dry, and slice the vegetables. Transfer them to a large bowl or a gallon-size zip-lock bag.
4-Pour the marinade over the vegetables: Pour the marinade over the vegetables and toss to coat evenly. Refrigerate and marinate for 4 hours.
5-Preheat the grill: Preheat the grill. Thread the vegetables onto the soaked skewers so the pieces touch but are not packed tightly.
6-Oil the grill: Oil the grill using a brush to prevent sticking.
7-Grill the skewers: Grill the skewers over medium-low heat for about 15 minutes, turning every few minutes until the vegetables are soft.
