16 ounces tomato sauce

10 ounces can of diced tomatoes with green chiles (or regular diced tomatoes plus 4-ounce can of green chiles)

1 Β½ teaspoons dried oregano

2 teaspoons chili powder

2 cups frozen corn

2 ounces shredded four-cheese blend (Mexican-style)

1 Β½ cups dried macaroni-style pasta cooked al dente

1 cup shredded four-cheese blend (Mexican-style)

Sliced green onions for garnish

Instructions

1-Preheat oven: Preheat oven to 325 degrees Fahrenheit and spray a two-quart casserole dish with cooking spray.

2-Brown ground beef: Brown ground beef with onions, bell pepper, and red pepper flakes in a large skillet; season with the specified seasoning.

3-Add tomato and seasonings: Add tomato sauce, diced tomatoes, oregano, and chili powder; bring to a gentle boil.

4-Simmer: Reduce heat and simmer for 15-20 minutes.

5-Add corn: Add frozen corn and simmer a few more minutes.

6-Stir in cheese: Remove from heat and stir in 2 ounces of shredded cheese until melted.

7-Mix in pasta: Stir in cooked pasta gently.

8-Assemble casserole: Pour mixture into prepared casserole dish and top with 1 cup shredded cheese.

9-Bake: Bake uncovered for 20-30 minutes until browned and bubbly. Garnish with sliced green onions if desired.
