2-Portion and Shape the Dough: Divide the dough into 10 equal balls, then roll each one into an 8-inch rope with slightly thicker ends to mimic bones. Place 5 on each baking sheet, spacing them at least 2 inches apart so they have room to bake without touching. Using kitchen scissors, cut a 1-inch slit at each end and stretch them gently to form those creepy bone shapes.
3-Season, Bake, and Finish: Brush the breadsticks with the 2 tablespoons melted unsalted butter and sprinkle them generously with the 1/2 cup grated Parmesan cheese. Pop them in the oven for 15 minutes, then pull them out to add the 1 cup shredded mozzarella cheese on top. Back in for another 5 to 7 minutes until the cheese melts perfectly.
