– 2 egg yolks for lemon curd topping

– 1/4 cup lemon juice for lemon curd topping

– 2 tbsp butter for lemon curd topping

Instructions

1-Prepare Your Mise en Place: First Step: Preheat oven to 350ยฐF. Line an 8×8-inch pan with parchment or foil for easy release. Crush graham crackers if needed; measure all ingredients at room temperature to avoid lumps.

2-Make the Crust: Second Step: Mix 1.5 cups graham cracker crumbs, 1/3 cup melted unsalted butter, and 1/4 cup sugar in a bowl until it resembles wet sand. Press firmly into the pan bottom using a glass or spatula. Bake at 350ยฐF for 10 minutes until golden. Cool 10 minutes. This sets a crisp base.

3-Prepare the Filling: Third Step: Lower oven to 325ยฐF. Beat 16 oz softened full-fat cream cheese and 3/4 cup sugar until fluffy, about 2 minutes. Add 2 eggs one at a time, mixing low speed after each. Scrape bowl. Blend in 1/4 cup fresh lemon juice, 1 tbsp zest, and 1 tsp vanilla until smooth. Avoid overmixing to prevent cracks.

4-Bake and Cool: Fourth Step: Pour filling over crust. Bake 35-40 minutes until edges puff and center jiggles slightly like Jell-O. Turn off oven, crack door, cool 30 minutes inside. Room temp cool 1 hour, then chill 4 hours or overnight. This slow cool stops cracks.

5-Add Topping and Serve: Final Step: Lift out, cut into bars. Top with powdered sugar, whipped cream, or lemon curd (cook 1/2 cup sugar, 2 yolks, 1/4 cup juice, 2 tbsp butter over low heat until thick). Garnish zest. Serve chilled. Store as below.
