Ingredients

– 2 large sweet onions, cut into Β½ inch slices

– 1 lb fresh mozzarella cheese, cut into Β½ inch slices

– Β½ cup flour

– 2 beaten eggs

– 1 cup plain breadcrumbs

– Β½ cup marinara sauce

Instructions

1-First, slice the onions into rings approximately Β½ inch wide and separate them carefully.

2-Then, prepare your mise en place by measuring and setting out all ingredients to keep things organized.

3-Next, slice the fresh mozzarella cheese into long Β½ inch wide slices that fit snugly inside the onion rings.

4-Now, pair the onion rings so that the cheese slices fit tightly between them, pushing the cheese in completely to fill the gap.

6-Freeze the floured rings for at least 45 minutes, preferably overnight, to help everything hold together.

7-Dip the frozen rings into the beaten eggs for a sticky layer.

9-Fry the rings in peanut or canola oil until they are lightly golden brown, which takes just a few minutes.

10-Drain the fried rings on paper towels to remove excess oil.
