Instructions

-Let’s dive into the fun part actually making these bars! Start by preparing all ingredients and measuring them precisely, then line an 8” x 8” pan with parchment paper or foil for easy removal. This step-by-step guide will walk you through the process, incorporating tips to make it smooth and enjoyable for home cooks and baking enthusiasts alike.

-In a mixing bowl, combine melted chocolate chips and vegan butter over low heat until almost melted, then remove from heat and stir to finish melting. Mix in the graham cracker crumbs, shredded coconut, nuts if using, and vanilla to form the base layer. Press this mixture firmly into the prepared pan and chill it in the fridge to set.

-For the custard layer, blend all ingredients with a mixer until smooth, adjusting the non-dairy milk amount for your preferred consistency use 3 tablespoons for soft and gooey or 1-2 for firmer results. Pour this over the cooled bottom layer, spread it evenly, and freeze for 15 minutes to firm up. Finally, for the top chocolate layer, melt the chocolate chips and vegan butter over low heat until mostly melted, then stir to finish and pour over the custard layer, spreading evenly.

-Let the bars cool in the fridge for several hours or overnight until fully set. Slice them using a knife heated in hot water and dried to prevent cracking of the chocolate layer. Once done, store the bars in an airtight container in the fridge for the best taste and texture.
