Instructions
1-First, prepare the chocolate pudding by combining 1 cup milk, 1 ½ cups heavy cream, ½ teaspoon vanilla, ¼ teaspoon salt, 2 large eggs, 4 egg yolks, and ¼ cup sugar in a saucepan. Cook on low heat while stirring constantly to avoid curdling, then strain the mixture and add 225g each of chopped milk and dark chocolate until smooth. Once done, let it cool slightly.
2-Next, make the whipped cream by beating 2 cups chilled heavy whipping cream with 3 tablespoons granulated sugar and 1 teaspoon vanilla until it reaches medium peaks for the ideal texture. For the base, crush 30 chocolate crème cookies (about 340g) and mix with 5 tablespoons melted unsalted butter if desired, then press into your serving dish.
3-Now, assemble the trifle: Layer the crushed cookies at the bottom, followed by the dark chocolate pudding, then the whipped cream. Add another layer of crushed cookies, the milk chocolate pudding, and more whipped cream on top. Chill the entire dessert for 6 8 hours to let the flavors meld. Before serving, pour on the ganache made from 50g dark chocolate, ¼ cup heavy cream, and 1 teaspoon oil, and decorate with cherries and chocolate shavings if you like.
