Ingredients

– 1 large onion, sliced into 1/2-inch thick rings

– 1/2 cup flour

– 2 large eggs

– 1/2 cup milk

– 1 cup panko bread crumbs

– Vegetable oil for frying

Instructions

1-Prepare three small bowls: place 1/2 cup flour in the first, combine 2 large eggs and 1/2 cup milk in the second, and place 1 cup panko bread crumbs in the third.

2-Optionally, soak the sliced onion from 1 large onion in ice water to reduce the strong onion flavor and add sweetness.

3-Dip each onion ring first in the 1/2 cup flour, then in the egg and milk mixture, and finally coat with the 1 cup panko bread crumbs. Repeat until all onion rings are coated.

4-Heat about 2 inches of vegetable oil in a saucepan to 375 degrees Fahrenheit over medium heat.

5-Fry the onion rings for about 2 to 3 minutes on each side or until golden brown.

6-Remove the fried onion rings and drain on a paper towel-lined plate to absorb excess oil.

7-Sprinkle with salt if desired, and serve with favorite dipping sauces such as ranch or ketchup.
