Instructions

2-Sift 1 1/2 cups all-purpose flour and 3/4 teaspoon baking powder into a bowl; whisk them together to combine.
3-Using a stand mixer with a paddle attachment, cream 1/2 cup unsalted butter, 1/2 cup granulated sugar, and 1/2 cup lightly packed brown sugar until smooth and fluffy.
4-Add 1 cup smooth, salted peanut butter and mix until fully incorporated for that perfect nutty base.
5-Beat in 1 large egg and 1 teaspoon vanilla extract; scrape down the bowl sides and mix again to ensure everything blends well.
6-Gradually add the flour mixture on low speed, mixing until just combined to avoid overworking the dough.
7-Roll the dough into 1-inch balls and place them on the parchment-lined baking sheet, spacing them evenly.
8-Flatten the balls with a fork in a criss-cross pattern to help them bake uniformly and add that classic look.
9-Bake for 8 10 minutes until the edges slightly change color but the centers remain soft, keeping them wonderfully chewy.
10-Cool the cookies completely on the baking sheet to let them set and firm up.
