Ingredients
1 1/2 to 2 ripe pears (any variety such as Beurre Bosc, Packham, Josephine, Corella, nashi pears, or sweet apples)
3/4 cup whole walnuts (substitutes: almonds, pecans, hazelnuts)
120g (4oz) rocket (arugula) lettuce
120g (4oz) creamy but crumble-worthy blue cheese (e.g., Roquefort-style, Gorgonzola-style, Stilton-style, Danish blue, or a mild blue cheese variety for a less intense flavor)
1 1/2 tbsp Dijon mustard
1 1/2 tbsp honey
1 1/2 tbsp cider vinegar (or white wine, champagne, or sherry vinegar)
1 1/2 tbsp vegetable or extra virgin olive oil (nut oils like walnut or hazelnut oil optional)
1/4 tsp salt
1/8 tsp black pepper
Instructions
1-Combine all dressing ingredients in a jar and shake well, or whisk thoroughly in a bowl.
2-Halve the pears, scoop out the cores, and slice into approximately 3mm thick slices.
3-Toast the walnuts in an oven preheated to 350ยฐF (180ยฐC) for 8 minutes, or until fragrant. Leave some walnuts whole and break others in half.
4-In a large bowl, toss the rocket lettuce with 2 tablespoons of the prepared dressing.
5-On a serving platter, arrange one-third of the dressed rocket. Scatter one-third of the sliced pears, one-third of the toasted walnuts, and one-third of the crumbled blue cheese over the rocket. Repeat the layering process two more times.
6-Drizzle the remaining dressing over the salad just before serving.
