Ingredients

– 1 cup unsalted butter, softened

– 8 ounces full-fat cream cheese, softened

– 2 cups all-purpose flour

– 1 ยฝ cups light brown sugar, packed

– 2 large eggs

– 2 tablespoons unsalted butter, melted

– 1 teaspoon pure vanilla extract

– 1 cup pecans, chopped

Instructions

1-Preheat oven to 350ยฐF and generously grease a mini muffin pan to prevent sticking.

2-For the crust, beat softened butter and cream cheese together until very well combined, then slowly add flour and mix until a ball of dough forms.

3-For the filling, combine brown sugar, eggs, melted butter, and vanilla extract until well combined, then fold in chopped pecans.

4-Divide the crust dough into 12-16 balls of about 1 tablespoon each and press each into the greased muffin pan wells, shaping up the sides.

5-Fill each crust with 1 heaping teaspoon of filling for the perfect portion.

6-Bake at 350ยฐF for 15 minutes, then reduce oven to 250ยฐF and bake 10 more minutes without opening the oven to set everything nicely.

7-Remove from oven and let cool completely before serving to achieve the best texture.
