Ingredients

– 1/3 pound corned beef or deli pastrami, cut into thin strips

– 5 slices Swiss cheese, each about 1 ounce, cut into thin strips

– 2 cups sauerkraut, drained and squeezed dry

– 10 egg roll wrappers

– Thousand Island dressing for dipping (quantity as needed)

Instructions

1-First, prepare all your ingredients: shred the corned beef, drain and squeeze the sauerkraut dry, and cut the Swiss cheese into thin strips. Lay out the egg roll wrappers on a clean surface for easy assembly. In a mixing bowl, combine the corned beef, sauerkraut, cheese, and a bit of Thousand Island dressing to create a tasty filling.

2-Next, place a spoonful of the filling onto each wrapper, then fold the edges and roll tightly to seal. Heat oil in a deep pan to about 375 degrees Fahrenheit and fry the rolls until they’re golden brown, which takes 3 to 4 minutes. Finally, drain them on paper towels and serve warm with extra Thousand Island dressing for dipping.

3-For a healthier twist, you can bake them at 425 degrees Fahrenheit for 10 to 15 minutes on a greased baking sheet. I tried this once when I was short on time, and it worked like a charm crispy outside and gooey inside.
